Pass the Potatoes, Please

Florida has many varieties of potatoes, from russet to red creamer. Potatoes are grown all over Florida, but mostly in the northwest part of the state. they are available from January until June, with peak months of March, April, and May. When buying potatoes avoid those that feel soft or spongy, have any bruising or blemishes, or show signs of sprouting. Fresh potatoes should never be kept in the refrigerator or plastic bags; keep them away from light and humidity as well.
