Snappy Beans

Florida ranks first nationally in the production, acreage, and total value of fresh market snap beans. They are available from October until May, with peak-production in February, March, and April. When buying snap beans they should break or snap crisply; if the beans are bendable, don’t purchase them. The pods should be smooth and uniformly colored. The best way to store snap beans is in a ventilated plastic bag in the refrigerator.
