Cool Cooking with Red Hot Tomatoes

Tomato the fruit or tomato the vegetable?

Botanically the tomato is a fruit, but they are legally considered a vegetable. They are mainly produced in South Florida, with  light production in North Florida. The growing season is September until July; the peak months are December, January, March, April, and May. Pick tomatoes that are plump, shiny, and that give slightly when pressure is applied.  Tomatoes should be stored at cool room temperature, out of their packing and never in the refrigerator. Storing tomatoes in the refrigerator tends to diminish the flavor.
