Chopped Salad

Ingredients

  • 4 cups Florida lettuce hearts, chopped
  • 1 15-ounce can red beans, drained
  • 1 cup Florida celery, chopped
  • 1 cup Florida red bell pepper, chopped
  • 1 cup Florida yellow squash, chopped
  • 3/4 cup Florida peanuts or pecans, chopped
  • 1/2 cup cooked corn kernels
  • 1/2 cup Florida cilantro, chopped
  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons grated Parmesan cheese

Preparation

  • Combine first 8 ingredients in a large bowl; mix well.
  • Whisk together vinegar and oil and pour over salad; mix well. Top with cheese and serve.

Yield 6 servings
