Red Bean Salad


  • 1 15 ounce can kidney beans
  • 1 cup chopped Florida celery
  • 1 small Florida zucchini, chopped
  • 1 small Florida cucumber, chopped
  • 2 green onions, chopped
  • 1 cup low-fat mozzarella cheese, cubed
  • 1/2 cup grated Florida carrots
  • 1/3 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 tablespoon olive oil
  • Salt to taste


  • Rinse beans under cold water and drain well.
  • In a large salad bowl, combine all ingredients. Toss well and serve.
