- 1 15 ounce can kidney beans
- 1 cup chopped Florida celery
- 1 small Florida zucchini, chopped
- 1 small Florida cucumber, chopped
- 2 green onions, chopped
- 1 cup low-fat mozzarella cheese, cubed
- 1/2 cup grated Florida carrots
- 1/3 cup chopped fresh parsley
- 2 tablespoons lemon juice
- 2 tablespoon olive oil
- Salt to taste
- Rinse beans under cold water and drain well.
- In a large salad bowl, combine all ingredients. Toss well and serve.
