Florida Black Eyed Pea Salad


  • 2 cups frozen or canned low-sodium black-eyed peas
  • 1 cup Florida bell pepper, chopped (your favorite color)
  • ½ cup red onion, chopped
  • 1 cup Florida tomato, chopped
  • 2 cups cooked rice
  • 1 tble cajun seasoning mix


  • Thaw and/or rinse black-eyed peas thoroughly
  • In a medium sized mixing bowl, add remaining ingredients and stir to combine
  • Taste and adjust seasoning with salt and pepper
  • Serve as a side dish or as a salsa with chips

Yield 4 to 6 Servings
