Rainbow Fruit Cones

Ingredients

  • ½ cup Florida carrots, shredded
  • ½ cup Florida papaya or cantaloupe, diced
  • ½ cup chopped pecans
  • ½ cup sliced grapes
  • ¼ cup Florida blueberries and/or strawberries
  • 4 oz. miniature marshmallows
  • 12 oz. low fat yogurt
  • Low sugar ice cream cones or bowls

Preparation

  • Combine fruit and marshmallows in a mixing bowl
  • Gently fold in yogurt then chill mixture for one hour
  • Spoon mixture into ice cream cones and serve
